"Victory by Design" is my all time favorite car documentary series. Each episode covered a single manufacturer and explains why they're so great through their famous racing cars and how it translates to their street vehicles. It's dated since the series concluded over a decade ago, though, so you really can't expect newer notable cars.
National Geographic's "Megafactories" series also occasionally covers a major car or motorcycle manufacturer.
