Bought the Master Collection today, literally never played total war before
Started up Medieval II, decided on a short, easy difficulty campaign to get used to the flow of gameplay.

It's pretty fun so far, I'm up to turn 25 now. Is it normal for a lot of my lords to have taken up Pagan Magicians into their retinues though? We're a very pious people otherwise, two of my priests are cardinals and I have a church in every settlement.

Also, any tips for cultivating high chivalry/effective governers? Buildings to avoid, etc. I know the basic "release captives, don't exterminate" - but for things like tax or trade bonuses - how do I get those traits.
