That's good accuracy, now it's a matter of practicing headshots.

My biggest problem is picking off enemies with already low health.
I can headshot any squishy regardless of how fast they are, but then they retreat and I cant get the second shot in if my life depended on it.

At that point I just go Genji or Hanzo for shits and giggles.
Alternatively you could just stop playing attack/defense and go for KOTH, which in my opinion, is the only balanced gamemode where all heroes gets to be utilized for their full potential without cancerous chokepoints.

McCree isn't all about accuracy, most of the pro players have around 50% some of them even sub-50
It's about positioning and making sure you can land a series of 2-3 shots when it counts for that all-important pick.

roadhog, soldier, mei, or zarya. Pretty much anything that can heal themselves and do decent damage. zarya is included because you can protect teammates and get charge up when they make mistakes

I don't recommend symmetra for carrying. If your teammates are getting stomped, you wont have time to put up turrets and enemies will have more time to look for your shield generator
