Would it be a good daily life car? Really like that you can tweak and repair it yourself(not to mention its spartan design), but it also has quite the fuel consumption.

HELL NO. Shit mpg aside, it's unstable and very noisy at higher speeds, the interior is terrible, the reliability is terrible, and there are no safety features at all aside from ABS on 2012+ models.
It is a good base for a 4x4 off-roader on a tight budget, or an okay-ish country car for poorfags, but do not DD it.

If you live in merica id say no as a DD but it would be neat as a collectible/oddity, there's plenty of other old two door suvs that are much easier to take care of/get parts for like Pajero/raider, tracker, samurai, cj jeeps, etc.

I daily drive one of these in the UK.
I recommend more people do it.
It's slow, it's noisy and is simple in terms of creature comfort all of these aside from speed can be can be improved with a bit of bodging.
But do you know what it is? It's honest. You will never see a Lada Niva oversold, it will sell itself to you in terms of off road performance, ease of maintenance and more importantly character. Dunno what all the hate is for, probably amerifats used to 'muh ranger' or some other fat plastic engine-bayed peice of tripe. Ease of maintenance and spare choice and availability is unparalleled, whilst truck boys in my area repay their car loan I buy accessories and cheap beer. Part prices are cheap. Most jobs can be undertook with a basic set of tools and the era it was designed in reflected its design. No frills, everything that isn't needed or more prone to mechanical failure is removed. Forget heated seats, automatic windows and self adjusting wing mirrors this is car ownership at its most basic form and in fact, I love it.
I live in the middle of nowhere, unforgiving roads and sparse settlements and it has never failed to bring me home and whatever has gone wrong with it I just spent my evenings squirreling away.
When 2 Lada owners meet they are instant comrades, there is a shared bond between people. You do not buy the car for the cars sake, you buy it for the lifestyle. It is an un mistakable vehicle, once at the pub a Russian excitedly exclaimed that his grandad has one ploughing through Russian winters trouble free from year to year and I remember chatting to a Pole who 'Had one at home, is very very good car, need to go back, good car'.
Yes they are seen as shitboxes, the second the communist block came to a end they were abandoned for something shiny and western but when said shiny and western device breaks down or requires a specialist or expensive part then guess who is called, the humble Lada Niva driver.

Because I wanted a cheap, small, and utilitarian 4x4 I could maintain on a shoestring budget, not a vehicle to drop my children off to football practise in and take my mixed race wife to yoga.

I don't have any children but I like to have a car that will work for everything.

Went 72 mph in my 1997 one once, thought I was going to die. I would imagine a new one with ABS, some extra sound padding (like old carpet or if you are minted some extra rubber) and nice wheels would be just fine.
