And I feel like hairstyles will be bought from a stylist, but selecting one (with the ability to buy new ones) wouldn't surprise me.

I think it'll be just like the first game. Standard male/female hair, Squidforce headband and shirt, new brand pants and Kraken shoes. Once you hit level 5 the stores top kicking you out and you can start to customise. RNG and level restrictions on what's in the store
