How do I figure out what tank ammo types are best for what situations? Like, the default Britbong ammo seems way the hell more powerful than other nations' defaults, but almost every vehicle has an alternate ammo type and I don't know if they're useful for anything.

Look at the ammunition name and its image.
APHE, a thing punching through thick armor with a boom on the head, is generally the best ammo if it pens, since it explodes inside and gibs all the crew.
Pure AP, without the boom thingy and without a filler/TNT stat, just punches through and does damage in its direct path cause fuck spalling. Same for APDS to some degree.
HEAT has constant pen. However, don't bother with it unless you have a short barrel, since your AP is more effective. Exception is for HEAT-FS with ridiculous pen.
HE is just that, HE.
Use APHE for general flanking/front pen shots, APCR and APDS for though to pen tanks, HEAT for short barrels and HE for SPAA/lightly armored targets. Pure AP is kind of broken and useless.
