First, you have to complete all of the Papyrus date sidequests to unlock the special winter-themed joke book that Sans leaves lying on the couch. Take the book and bring it to a place where you can encounter a Snowdrake, then select it and read it out loud. A cutscene will play where one of them will approach you, impressed with your prowess in winter-themed humor. He will ask to join you in your quest out of respect for your jokes and in hopes that he can gain new material. The mount itself counts as 60% boost in movement speed.

I suppose you could do that, but you'd have to buy it off Grillby, and usually by that point in the game you wouldn't have that kind of money since the ketchup is for some reason ludicrously expensive (maybe he doesn't have enough?). Either that or you could steal it, but you'd need high enough speed (helped by Sea Tea) to get it without Grillby noticing. And if you return after giving Sans the ketchup, Grillby will always stare at you when you enter and you'll get a prompt saying something like "you feel like he is judging you".

How do I unlock the player home in Snowdin? The guide I skimmed said I needed to complete the sidequest where you return Sans's pet rock to his family, but every time I talk to the rock it ignores me. Do I need to force Sans to leave the house?

I think it's for a valid reason so I can't help it.
The problem isn't about something I had done, but rather about what I haven't done and how more and more evident it is how incapable I am at fixing things and how it's only going to get worse.
Imagine being the only one who knows there's a catastrophe coming and despite trying you finally realize there's nothing you can do about it while everyone just tells you that it's not so bad because everything isn't currently too bad but you know what's coming. That's pretty much how I feel.
