All we know is angels are somehow connected to pilgrims. We don't know how or why, just that they can't die unless the pilgrim is killed. It looks an awful lot like a projection, but it could also be like what the player character does with red eyes and white signs when they send their phantom out into other worlds. The "projection" could just be their soul dislocated from their body.
We don't know much about souls other than the fact that living things have them and humanity (human dregs) separate from them to sink into the deep after death. Maybe when the darkness drips out of a human soul, what you're left with is an angel? The Darklurker's soul was unusual in that it looked like a normal yellow-white soul in the game that took special care to make all dark-related souls purple. Why did a creature who lived in the deepest part of the abyss have a soul that wasn't purple? There wasn't any darkness in his soul, not like Nashandra or Velstadt.
Alternatively, angels could be an entirely separate thing from the pilgrim trees, and they just come up from the deep to guard them. We haven't seen the angel's death animation yet, we only have vaati's word for it. It could look exactly like its entrance animation and just be vanishing in a pillar of light to teleport off to whoever the fuck knows. There isn't enough information to say yet, really.
It might even be that we are the pilgrim and Darklurker is our angel, considering that our literal title in the covenant is pilgrim.

Everything heals too fast, the upgrade system is railroaded, the bosses are "hard" but not traditional dark souls hard a "Lets kick up dust but also spam moves" kind of hard, I really hate it, in Dark Souls 1 if you know what you're doing you can go ham, and fuck shit up at trade blows super quickly, in dark souls 2, it's slower and you heal slower but you can trade hits still, dark souls 3 is the a mix of both and it's absolutely fucking horrible, and I mean PVE here, not PVP.
Everything just spams shit and your character's damage isn't jack so you're left just baiting attacks waiting for an opening, since you can't tank hits without poise and have to rely on hyper armor to get anything done.
Every battle is so fucking crowded too, you've got to lure every enemy you fight or else you'll get over run with enemies from every distance.
I hope to christ they release a Dark Souls 3" Fixed all the weird shit edition

2H has much more reach. The 1st 2HR1 is the best move in the dagger's moveset. The followup R1s also keep stepping forward to keep up as your attacks push staggered enemies away
1H will trigger bleed faster if you can sandbag something because the R1s chain more quickly and cost less stamina. It has much less reach and has less of a step-forward.
When you find Farron Keep, keep going. On the other side you'll find the place where you can get "Carthus Rouge." That item is the bread and butter of the bandit's knife, live by it.

It's not a Saint Bidet build. It's just your standard Quality with Faith points for DMB. It's not optimized for it. For Saint Bidet, you actually want 60 FAITH and buff it with DMB. That way it becomes pretty much GFS.

I also have the Corvian Greatknife and the Brigand Twindaggers and I'm trying to figure out how to really use them and when. So far "if it has a shield, use corvian" is my rule, but I'm still playing around.

I'm thinking the second possibility is the more likely one, actually. How is a soul by itself going to spontaneously grow a body? If that were possible, the Lord Souls wouldn't have needed anyone to find them. I just didn't want to leave out anything in case they did turn out to be projections. If the Deep Gem's description is referring to angels that live in the deep, then it's more likely that they aren't human at all but just interact with them on some level.
One of the reporters who got to play the DLC talked about how the angels would attack abyssal enemies when they weren't targeting you. Maybe angels don't like the abyss. Maybe that's why Darklurker attacked us, because we'd gone too far into the abyss and learned a bunch of ways to twist and distort the normally peaceful dark.
Which is all speculation. This DLC actually seems interesting unlike AoA.

Your rule should be generally: If it takes less than 5 hits to kill, use the Corvian If it takes more than 5 and isn't immune to bleed, use bandit's
Brigand's suck, sadly. They're never better than the corvian. Just use them when you're bored of stabbing things and want to be flashy.
Also note that because the dagger R1 recovers so quickly, you can hold forward while attacking and go R1->wait->R1 with a rhythm to stunlock enemies while repeatedly using only the 1st R1 thrust. The timing of the pause takes a little getting used to, but the 1st R1 is so good that it's worthwhile.

Because the higher your level goes, the less diverse builds become. I've done the math, and at SL120 you have ten distinct builds assuming two offensive stats at 40, or 15 distinct builds if we include the ones that push a single stat to 60 instead of going for two. For comparison, SL250 has four distinct builds, all of which are some variant of quality and only one of which doesn't include spellcasting of at least one kind.

Also worth noting that the DSA, being controlled by "Pilgrim Butterflies" is counted as an abyssal target and receives more damage from the Wolf Knight GS. It also has massive dark defense.

That's disappointing about the brigand's because they seem kinda cool. For bosses that can be bled, is Corvian + Rouge stronger DPS-wise than Bandit's + Rouge? Also nice tip about the R1. That shit's ridiculous. I also have a Fire Dagger for fighting the rare enemies that fire messes up, but I don't think I'll use it much outside the the cathredral... I wonder if I should even bother upgrading it since I've stunlocked those shits to death in NG+4 with an unupgraded torch.

Forgot to mention, that's only "technically 10-15 distinct builds", since the vast majority of them are non-functional due to lacking enough equipment options to be a complete build. In reality, the stats at SL120 may allow for 10-15 builds but the way infusions work and choices for uninfusable gear means only 2-3 of those are viable while the rest are trash.
Sorry, meant to add the bit above in. Our only hope for build diversity is if TRC adds more uninfusable weapons for all the so far unsupported build types.

bandit's + rouge is better. Corvian + rouge is like an unbuffed bandit's knife with like 30 more AR Bandit's with rouge bleeds twice as often, which far and away compensates for the small difference in AR.

The highest build I have is level 93 at NG+3. It doesnt feel necessary to go any higher than 60-70 for pve and the lower the SL the less cancerous the pvp. That is, until you get to 1-20 which is overflowing with twinks. My favorite save is a SL 40 STR build.

Refined infusion doesn't actually softcap at 40/40, that's just its first point of diminishing returns. Refined continues to get good scaling up to 60/60, and will outpace Hollow at any level. The only build Refined doesn't outpace on a level-per-level basis is casters, and in there case it's more like becoming actually functional since casters don't even start to meet all their basic stat needs until SL140.

Other than the Brigand Dagger, what other notable weapons have bleed? I remember a scythe on my other character that had bleed. I'm planning on sticking solely to daggers but I'm just curious.

L1s hit twice, which makes paired weapons good for building status effects. Unfortunately, they don't apply the full bleed value with each hit, more like 75%, so the full L1 is like 1.5 hits instead of 2. In that sense, bleed brigand's would still build bleed slower than a rouged bandit's knife, and do less damage since the infusion kills their AR.
That was probably a strong gimmick before the fixed tumblebuffing, but right now bleed-infused weapons can't be buffed and the infusion isn't as good as rouge.

The returns are pretty shit for refined though. Other builds are bad because they can't reach softcaps. At 130, refined will get meaningless 10-20 ar at best for damage, while those builds get 10 more points into stats they haven't even reached the first major softcap yet, gaining far more benefits than quality.

Refined could simply dump an extra 10 into Vigor for 100 extra HP with favor+2 and life+3. I have a character with 50vig and I can't tell you the number of times I've survived some attack or another with barely a sliver of hp.

Most curved swords have innate bleed, as do most scythes and whatnot. Very few weapons are actually good at bleeding, though, because it requires being able to attack fast at low stamina cost. Warden twinblades are probably the best weapon in the game for applying bleed specifically. 2kat and claws aren't particularly special outside of the fact that their WA can be abused for instableed combos in pvp. Carthus is the best non-washingpole weapon in the game and coincidentally happens to have bleed and be buffable.
