Hoshizora no Memoria and its fandisk Eternal Heart are a good starting point. If you can understand that without external aid, you could probably start translating stuff. CG and SideM at least don't have much difficult language, though there are exceptions.

A lot of people like to recommend Hanahira as a beginner-friendly VN to people just learning Japanese, but I personally found that VN to be dreadfully boring and didn't even make it halfway through.

If you want a bit of an unorthodox recommendation, why not give Tokimeki Memorial 2 a shot? It's not that hard of a read, and the gameplay can be sort of fun too, if you're into those old-school dating sims with lots of stat management and number crunching.

Alternately, you could just jump into an untranslated iM@S game.
