Modern (emissions and mpg) friendly automatics seem to have this problem.

My Dad's 2003 Ram picks the appropriate gear and stays there until it needs to change no matter what.

Isn't that the result of the ECU adapting to different throttle habits between owners? Maybe you aren't as punchy on acceleration as its owner.

then i got to drive a recent automatic car for a couple of months.
I never wanna go back.

Why?

red is a scary color

Using the paddles is just asking it nicely if it wants to shift. It won't shift until all the computer parameters and fluid pressure in the tranny are up to it's standards.
