Probably a second gen corvair. You can get them for 800$ if you look in the right places. They are light have great handling and are very easy to make fast.
If you want to go crazy and ls swap it you will lose a bit of handling but the install is extremely simple.

Also, if the OP wants rwd the old Volvo 7/900s with a straight 6 and m90 5-speed are actually quite fun to drive. Not fast, but the subjectives such as sound, drivetrain layout, and feel to an extent are all there. Not to mention because Volvo many had a factory locking diff for mad skids.

Too heavy for my taste. FWD is actually fine without meming, but only in a light short wheelbase car is it acceptable for performance. The TL is just too heavy and long to work well as a FWD sports car, it's more of a daily driver with a nice interior but still isn't terrible to drive.
