If we're considering the audition videos to be their "true" personalities, then I don't think they've had their personalities changed by the Monokumarz just yet. Kaede is very rude to Saihara (to the point of telling him to shut up because she's scared to) and distrustful. Saihara's psycho personality only comes out when he talks about Dangan Ronpa; in the prologue he comes across as the nervous, timid guy he appears to be in the beginning of the audition video. We don't get much out of Kaito, but he seems to be just as rude and loud as he was in the video.
