I love big games.

Not that user, but when I want to make straight UVs I use the "follow active quad" unwrap. I learned it from this video youtube.com/watch?v=XiQOHSzyooc

Then I fix up the UVs from there. Also remember to turn on pixel snapping in the UV editor, that will make it a lot easier.

Learn programming. Best case you make your first year a lot easier. Worst case you learn programming isn't for you without wasting a year.

Become a hooker?

If you don't know programming and don't have money to pay programmers, you will not make a successful game.
It will take you years to learn programming well enough to make a good game. There are some extremely rare exceptions to this, but based on your post you aren't going to be one of them.
If you're prepared to spend actual years learning and practicing, then by all means. Otherwise, just stop.

Friendly reminder that you'll never be a successful dev if you're not a social butterfly. Going to parties, networking and having engaging conversations with industry connections is how you become successful, not by silently working hard on some stupid video game.
