On top of that had you not beaten the Dungeons all that would've happened was you fighting the elements and Ganon being at full health. That would've been a bad end in that you couldn't beat him but not in terms of a cutscene

You can climb from the outside and dodging the guardians behind walls. Just climb the walls a lot and you can reach the top. It's most definitely possible. I managed to beat Windblight Ganon and then ran out of weapons and shit for Waterblight so just called it quits.
