Because people complained that CVTs sound like mopeds so manufacturers gave them fake gears.
Think about that, CVTs are supposedly the most efficient kind of transmission, yet people willingly gave up on the whole point of CVTs so that they can hear the engine revving like it was a normal automatic.

I don't blame Honda for doing that, they just do what sells better and it's not like the fact that CVTs with paddles exist is going to affect my life in any way, I blame the people complaining about CVT sound for being complete morons

That's not even remotely correct. The CVT is constantly shifting, fuckwit. Shifting isn't defined as an abrupt change between 2 set gear ratios.
