If you had mods and got rid of them at some point, you need to do a clean install. Like actually going in and deleting the origin folders associated. Similar to Steam, uninstalling through origin won't delete all of your files and you might have some errant data floating around that's fucking with your game.

I go to multiplayer, it loads up, then I try to switch characters to either the Collector Adept or Cabal Vanguard. Then it just crashes. Black screen, and a "MassEffect3.exe has stopped working" message. Sometimes, when I try to load multiplayer itself it crashes.

If you have an nvidia card, search for nvidia control panel. There might be some 3D settings that say override application settings. This probably isn't it, but you should know how to navigate this screen anyway.
Next thing to do is try turning off origin overlay. Running the ME3 client as admin and trying to run it in xp compatibility mode.
