I wouldn't say it's constant, but there are plenty of moments in Fata Morgana like that. Danganronpa also has things like that in spades, but it's also pretty heavy handed with it. Umineko and Higurashi also have that kind of humor.

Can't really think of anything else at the moment. It's pretty common for titles with tragedy in them to also have the protagonists engage in a lot of self-depreciating metahumor ("Why does the universe keep doing this to me, etc.), often putting the situations they're in in some sort of levity. You can probably find this kind of thing in nearly all tragic VNs, but it's going to be pretty variable of course.
