How do I make my Skyrim save fun so I'll keep playing and finish dawnguard/dragonborn? Most mod combinations I download end up making the game hard and unfun. I realize I might be being a bitch but so many mods seem to "rebalance" skyrim into being a game where they expect you to

I just want something that will make skyrim feel like an RPG. I want to be able to build tanky and not give a fuck. I want to abuse stat/gear combos and minmax my character through grinding and perk selections. I don't want realism and I also don't want shit that focus's on action combat.

These three can make or break the wrist area.
Right click the bone you wish to move, hit R and then double tap X/Y/Z for the axis you are moving it on.

Naturally the main you want is the yellow bone. Bend forward and back is X, Twist is Y and Z is side to side.

So like apparently trying to make the game 1 to 1 scale with the lore is impossible, but why aren't there mods or projects to make skyrim or morrowind bigger to more reasonable game sizes?
Doesn't have to be the imperial city being the size of oblivion, but it seems most town mods either add detail to the limited size, add a town in the middle of nowhere, but none seem to actually increase the actual size of skyrim or at least make one town multiple cells or something to make it actually a respectable size.
