yeah you dont need to do the sidequests and can use fates or the hunting log to push you towards a level. just do the main quest and whatever dungeons you have to. you can do palace of the dead as well, but ,my personal opinion is that you shouldn't do that if you're brand new as it's a very different experience from normal leveling

Quests with the + sign unlock various things. Class quests will start at your guilds headquarters and later job trainer.

yes, though you can only swap to gatherers/crafters in diadem (fury) once the initial objective is complete
