You look at Nasu's notes during literally any project, and he's got hundreds of things cut before the end of the story because they just couldn't find the right way to make it work. On the flipside there's shit that was actually crucial to the game that it turns out that he just put in during the last week when he randomly thought of it.

Once you look behind the curtains some of the magic goes away.

You ever hear about his notes during FSN, there were like ten routes at first or some shit. Medea, Medusa, Sakura, Ilya, Rin, Saber, Shinji, I think even Ayako was considered at one point. Originally he was going to have Ayako and that one friend of Shirou be like red herring masters as a false lead. Originally the game was going to be two different games, far side and fear side.

So much shit gets cut behind the curtains. During CCC he cut at least a half dozen characters apparently, and even more scenario ideas. Nightegame was cut from CCC, Gozen was originally going to be in it, and the other three egos.

Sacchin's entire route was lost. Kohaku's route was written in about a week for Tsukihime after the intial playtesting came back and they said they didn't like it ending with Hisui's route, they wanted Kohaku to have something.

Remove all the bells and whistles (which is GBF only way of making their characters unique) and it's literally a woman with wavy brown hair who is seductively pouting at the camera. Really not a fan of the art direction in that game. I know the same can be said about many characters in every franchise but GBF goes overboard with it.
