Completely agreed, but the critiques about Cortana are exaggerated. She had some good moments, and her going crazy seemed to naturally follow her story in Halo 3

No. Cortana was done extremely well in 4. This was someone who was on the brink of death and is going batshit insane. It's kind of a "No Shit" that she would be a tad bit more emotional.
Halo 5, though, well and truly slaughtered her character.
