A lot of people just play through these games with their friends. Plenty of other people just summon a lot of phantoms because they're there and they can.
It was fairly common in 2 as well with the Name ring, you just see it way, way more now because of their worlds being prioritized.

Demon's Souls was the very last Souls game I played, even after Bloodborne, and it's legit my favorite of the series. I wouldn't say its the "best" but the overall package is so charming and unique even compared to other souls games.

If you did (and assuming you aren't in NG and SL 140 or had three phantoms, etc) it was probably because you got very lucky with his ability usage. There are attempts when he WILL NOT allow you to get close. At that point, he's going to toast you or laser you or charge you when you wear down. Not to shit on your achievement, but I've seen several very good players have a lot of trouble with him, and they all have one thing in common: the successful attempts are the ones where Midir does two swipes and a breath beneath him again and again.

Incorrect, you're just shit. The weapon is meant for manual aiming and it's delayd hit R1's are perfect. Combine it with offhand spear/straightsword and it's absolutely terrifying, as of the later patches with working poise.

well of course I do, he's fucking SL1. He has to play super careful at all times, so there are opportunities and risks I can take that might result in damage for me, but would result in instant death for him. So of course I get more hits in then he does.

It's possible that Gwyn himself wasn't the painter, in the same way the loli painter is going to create Ash, which presumably the Ashen One will be as a god. Admittedly, I don't have any more evidence and I don't even know DaS lore very well. I just see this as a way of perpetuating the never ending cycle.
