Theoretically you can beat the game at SL70. Official recommendations are that you be at SL80 for Ariandel, and SL100 for TRC, but those are for casuals. As long as you don't break 120 (and don't want to do Yuria's questline on that character), you're more or less fine.

Parries generally don't work if an enemy is two-handing a greatsword or larger. Some WAs you can parry, particularly Farron Greatsword and DSGA. But if they're holding the weapon in two hands and it's fucking huge, best not to try.

at 120 meta with the prisoner's chain now viable, you'll have loads of spare levels if you just hit 66 str and 16 dex with 39 vig and 40 end, may as well use the knight and save on luck since you're going to be investing in either vit or att anyway

You save levels as a warrior but you have nowhere to put them since your strength is capped, so you may as well add something else, which will usually end up making knight better.
