Start clockwise from Ultima that's the order they were released and that's a pretty good measurement for their difficulty. This does of course depend on what characters you have leveled and what abilities you have honed.

Torments are going to depend more on your synergy for the realm and hones. Just go for the ones that match your best characters. You don't lose stamina for failure, so it's easy to check yourself.
