have you tried using a smaller shield to parry?
go back to the high wall of lothric and practice parries on the hollow soldiers, and then the Lothric Knights near Vordt, it'll really help you get a feel for it

I'm a scrub in dark souls 3, it's my first souls game, I've beaten it (no dlc) as knight and assassin, but my builds were a complete mess and it could have been way easier than it was. I just started my thief run, at firelink now, only tutorial boss down, any recommendations on a weapon I should replace my starting dagger with early on, if I should replace it at all? I'm planning on using anri's straight sword and a luck build, is this a bad idea? If so, can I get suggestions on an alternative before I waste time messing up another character build?

Yes, that's a bad idea. Anri's is garbage, luck builds are also garbage.

Luck builds were gutted, so you'd probably be better off going with something else.

What kind of play style are you looking to achieve? That should help narrow down some possible options for you.

you can't get Anri's until at least after Pontiff, just keep that in mind. You also can't get any Hollow Gems until the Irithyll Dungeon (I think), so you won't have any scaling weapons with Luck. Personally, I'd go with a different build and then respec Luck once you get the weapons/infusions you want.
you can definitely kill pontiff without parrying, but parrying makes him way, way easier

Going with a different build is right, except don't respect luck. They nerfed luck builds hard

The fight I had the most trouble with out of all the bosses, and again I don't have the DLC, was dancer, I don't really know what kind of style would be good against her, suggestions? Again, I'm a scrub, I only got past her by throwing my face at her 20 times.

The throne is the kiln. Vendrick literally took the goddamn kiln back with him when he raided 'the land of the giants.' The ground is broken-up around it because it was carved out and lifted back to Drangleic. The castle was built around the place he planted it.

Taking the throne is taking the kiln. It means you control access to the fire, to either link it, let it fade or try to claim it for yourself as Vendrick failed to do.

Nashandra covets the flame and wants it for herself. She just endlessly thirsts for power, and the first flame is of course the greatest source of power in the world. Most of the second half of the game was a defense set up hastily by Vendrick and Aldia to keep Nashandra from the throne. She can't get to the King's Ring because the singing Milfanito are the natural counter to dark things, so she can't even cross the door until you go and fetch it for her. Even when the door to the throne is open, she can't take the Watcher/Defender duo herself and waits for you to do it for her.

It doesn't excuse it, especially when they could have let you fight a full powered Vendrik at the end of the DLCs. Hell, the could have just let you spare with him in a memory to give you a point of reference. You can't say that beating him in his current state was somehow impactful when you never saw him in his prime.

At least we saw and heard about Gwyn's exploits constantly in the first game.

A faith build on a thief? I feel like since I initially wanted to do a luck run with Anri's, if that's the easiest way to beat what is the hardest boss (for me) then I should just reroll and start over or something. Out of curiosity, what did they do to make luck builds suck? Anri's felt overpowered as fuck on the character I used it on, but that was like 10 months ago.
