Yea any cugs or largehammer/axe type. Smack them with a sword once in your offhand and then twohit them with your big weapon. You're going for a kill at 70ish percent.

More my DS1 weaponfu specifically due to the way it felt, but it's okay in the other games too.

Weapons that do stupid damage in as little hits as possible, like Winged Knight Twinaxes, Sellsword Twinblades and horizontal swinging ultra weapons. Wolf Knight Curved sword is also really good because the damage and healing buffs it gives stack up faster if you hit multiple players in one swing, and it has the strong hyper armor to help with straight sword spam.

I'm at the Spear of the Church fight, the big guy summoned 3 phantoms which were shit. I killed them, and all 3 doors are still fogged. I've been chilling in this room for a while and nothing is happening. I can't move past any door.

Is this a bug? should I just reset the game and try again? Or am i missing something?

Congratulations, you get to do it all over again. It's a known bug, all you can do is quit the game and start it up again.

That's not actually a bug; any invasion in TRC has a chance of being turned into a Spears fight, regardless of whether or not you're actually in the covenant. Actually being in the covenant increases the chance massively.

Do the chances stack? If a spear lays down a sign, is he more likely to get summoned? Also, does it follow invasion matchmaking rules?

How likely is it to get fixed though? It doesn't affect PvP in any untoward way and doesn't affect PvE too much, and they'd have to get together and put out another patch even though they already did their last patch.
