The cathedral is a pretty big area, you're bound to level up some if you go there. Unless of course you specifically avoid that.

Gankspanks are fine, just need to be careful and use your environment. Remember, the Twinblades do insane damage when buffed, if you can get people staggered by monsters and get the full R1-L2-R2 off, they're almost certainly dead

As for armour, you can either go two ways: Find something that looks good and offers good defence, or find something that likely looks crap but offers even better defence

Either way, you want to go under 70.00% Equip Load, and have as much slash resist/absorb as possible, and ideally a good bit of poise to go with it
