Correct me if I'm wrong but don't citadels only take 24h to unanchor, so if you get wardecced you could just unanchor it, scoop it and store it in an NPC station for a week, wait out the wardec, then put it back up?

Right, but that's better than losing the citadel entirely. If it's obvious that your corp can't defend your high sec citadel against whoever wardecced you couldn't you just wait for them to bash it into reinforce, unanchor, and then scoop it to avoid losing the citadel itself, just the rigs?

Don't you lose the rigs when the citadel dies, anyway? If so then, if you know you can't defend it, what's the downside to scooping? It saves you the cost of the citadel and a big lossmail.
