They absolutely can deny the enemy team the use of their abilities by just fucking killing them. Usually the info from Sombra's wallhack is completely pointless because it doesn't show you the 3 other people around the one guy on low HP. The only useful thing Sombra does is the health packs, and if you're relying on health packs for healing then you've probably lost anyway.
