With 3D fighting games, you start off learning a combo starter (with reliable combo), throws, a sidestep catch, a high low mix and movement. Then you read up on frame data or moveset, and add moves to your arsenal. For example, if you go to a forum and see people rating the top 10 moves of a character, and moves keep popping up, you should probably look into those moves. This is why people say that it takes 2 tekken games to get good at it, there's a lot of knowledge to take in and to intuitively "get."
Tekken's move lists have a lot of filler. If you look, you'll see it's high low mid mixup variations of strings, along with throws from every angle and stances. You can ignore 10 hit combos, they're useless.

There are tons of character specific guides on the best pokes/punishes/combos for every character in TTT2. If you're looking for Tekken 7 specific stuff then watch videos from Korea/Japan and see what those players use. There aren't going to be written english guides for a game that's not out here yet.

There's no tutorial because Tekken fundamentals were destroyed in T5 and there's nothing to do now except clash in the middle of the screen like mongoloids and hope you get a launcher.
