If you want to get into nonshitpost specifics it's a combination women have no evolutionary need to play games that require any amount of skill which would be useful in combat and as such fall back on a character that they can still feel useful with without needing strategy, reaction time, hand-eye coordination, or forethought of any kind while also wanting attention from their "tribe" so they pick a role that everyone is more likely to pay attention to.
Mercy being the most feminine hero also likely has a small role.

Mercy was literally designed for people who have never played an fps before, healers from WoW and girlfriends and the like.
