Quest bosses are separate entities with different drops, pillaging one would just get you silver or a quest recipe.

That's exactly what I'm running. You wont do as much damage since Monk has attack options, but with Kab you wont need sp pots since Ein keeps you going, and Merkabah can do decent in a pinch.
