whatever you personally like. For NPCs I use Pride of Valhalla and Skysight, my characters use custom races where i mix and edit skin textures for them. Its up to you and your personal tastes for mer.

Is it a good idea to do mods in order of theme?

Like, should I do body/face and make sure they work, then SMIM and NobleSkyrim and make sure they work, then all the immersion shit and make sure it works, etc. Or can I just get these things willy nilly and install them however I want?

There's a site in the OP that covers most of what you'll ever want. Honestly modding these games is quite a effort but when you get stuff as you like it, you'll feel great.

At least until you get bored or frustrated or break your game or something.

I hate this, I got a similar issue. But its only with certain NPCs. I loaded all my mods up and looked for a conflict that could cause it.

Even tried NPC overhauls like WICO, fixed a one or two with the issue. But then I noticed WICO kinda looked like shit.

No clue what is causing it, TES5Edit detects nothing, and its only 4 or 5 npcs so far so I cant be assed to go through every mod for a edit.

well I just closed the game and started a new save, looks like it got fixed permanently, because the face is the same color as the body even in the lal character creator room, at least I can play with TKRE in peace now

Delphine, Narri and Hilde are brown faced in my game. Disable/enable, exporting headmesh, importing loose vanlla headmesh/tint masks from the bsa. No luck, I pretty much just give them a clothing/armor that covers up all the body to hide it.
