How do I make procedurally generated dungeons interesting? I can't rely on one-off puzzles or gimmicks.

My opinion. People can see procedural algorithms. Doesn't matter how complex it is, people will see through it.

To counteract this, you need to create hand-crafted content to counter-balance procedural content. So you have both your custom content and procedural content side by side, 50/50.

For example, a dungeons layout is procedurally generated, making each run a different route, but the boss fight or elite encounters are scripted, making them memorable and unique.

This is the best way imo.

Ignore the marketing speak. It's a pretty straight-forward space RPG with FTL like progression and PoE like story and itemisation.

Our combat system is unique though, something that has never been done before.

That game is nothing like minecraft, it's shallow early access bait just like the other 8000 games like it.

Sounds like DOOMs SNAP map maker. They did much better with Fallout 4's base builder I think, that actually allowed a great deal of freedom. The thing about minecraft though is it's use of the block as a pixel unit, it can be used to represent designs at tons of different scales which you can't do with ordinary assets.
