In Vanilla it's like riding a bicycle. It seems scary, but it's not that difficult, and once you've done it once, you can do it every time. There's plenty of pages and videos showing you where to stand and what to do when tanking any vanilla raid. As for if you have to be a warrior, the answer is yes -- it's the only way to become uncrittable.

Off-tanking is more difficult than main tanking, if only because you have to click into Defensive Stance when your main tank decides to die because he's tired of hitting two buttons for ten minutes and doesn't want to move out of the fucking fire.
