I just recently got DA:I, and I find myself just collecting all the crap around me constantly. Do I really need all this Iron? When does this game start getting fun? Combat is okay.
Maybe I'm just remembering the original DA being interesting and reading everything. I don't find anything I read in DA:I to be intriguing.

You can craft weapons and armor with Iron and other stuff. I will say that if you're comparing it to Origins, you're probably going to have a bad time just because it's pretty far removed from what DAO was like. Just take it at your own pace and you'll be fine.

Download the Quick Loot mod for Inquisition. It makes collecting stuff way easier. And yes you should collect everything to craft better gear. The game gets fun when you focus on the main story, reach Skyhold, acquire the combat specializations and play the dlcs.
