as the adc you generally have 1 target you can safely dps at a time at most, especially since you're playing one without dashes. trying to actually maximize "muh passive!" in any way but trying to bounce your Q to targets that are farther back will get you killed 90% of the time.

I play like 43 champs, most of them top laners

I don't get how people can just play one champ, doesn't it get boring?
There's no way I could say "Ok, I'm only going to play these three champs top" when I know that there's a top laner I can play that is strictly better for this team comp and against theirs

What do you do if you get like five onetricks of like Zed, Riven, Lee, Lucian, and fucking Janna or something?
Enemy picks Malphite and Zac, boom you're fucked. You have no engage, no frontline, no seige, and no waveclear, but that's all you know how to play.

It makes no sense to me how that's believed to be far and away the best way to climb.

I shouldn't say believe, because I know how many OTPs populate the upper elos. People say playing one champion helps you learn the game since you know the champion, but why is it that so many OTPs seem to know very little about the game in general and when they can't shitstomp their lane/jungle they break down?
