I know its a shit answer but seriously play who you want. I tried playing characters who others recommended as "beginner friendly" and it sucked the fun out for me. I went to a character I actually like and now I actually feel motivated to get better

Kazuya is good, but tough to play.

King is broken garbage. You'll get easy wins, but not really learn much about the game.

Asuka is fun, has easy execution, is a QT 3.14, and is great for learning fundamentals. She also does respectable damage with easy to pull off combos.
