Workers cannot proc additional items when processing raw materials, only you as the player can. You should process materials gathered to maximize profit. Just have workers gather wood/ore because literally all of it sells and sells quickly.
If you're feeling lazy or just want quick cash, you can make a lot less and just sell raw mats on the MP. You will be losing a lot of money, but you won't have to take the time to process materials.

I'd go from beer to ore/timber nodes, especially stuff like iron/coal. Most timber stuff sells easily.
I would never have my slaves process stuff and instead do it myself because you get more value out of it that way with artisan proc rate. Gather up flax/cotton/fleece and process them to grind up your processing level. Once you hit artisan you get good gains.

There are no distinct "servers," just channels anyone can switch to and from every 10 minutes. As far as I know, the steam channels are going to be recycled into the general population soon, for now though, only steam players have access to them.
