So, as it takes 80-100 turns to get the chaos event, you do the math

It all depends on what you are doing. If you are managing multiple armies on multiple fronts then deciding what to do next just depends on you.

I mean admittedly I don't know shit about tabletop Warhammer, so it's probably some compromise between the two rulesets, but it feels weird as fuck that some of my units seem to default to a loose formation, others tight etc

For the most part, tabletop regiments operate in tight formation. Only skirmishing troops have a looser formation, which they already have in Total Warhams by being spaced further apart by default.
