What's wrong about current method? I think holding trim and releasing it after you're stable then centering stick is fine

Kind of, you get better resolution and as a result much more accurate targeting, but it's easier to optimize low observable performance against it, like the F-117, the F-22 and F-35.

For reference, since I recently finished my IFR training.:

OM -> Located at the Final Approach Fix/Glideslope Intercept 4NM+ away from the runway threshold
MM -> Decision Altitude/Missed Approach Point for a normal CAT I ILS, 3500FT from the threshold of the runway.
IM -> Decision Altitude/Height for CAT II & III ILS approaches, really fucking close to the runway
