Lancelot's Knight of Owner sums up what I think is awesome about the franchise. They took actual events from his stories (his ability to win a fight with any weapon at all) and translated it into a really interesting ability by taking it to the logical extreme (the ability to use anything as a weapon on par with actual Noble Phantasms), and then they took THAT concept to the next logical extreme by having him use jet fighters and miniguns as his weapons. My favorite servants are always the ones who take their myth or story to the next level in some way like that. Heracles' God Hand or the difference between Vlad III and Vlad the Impaler are other great examples of that kind of reinterpretative stuff that I love.
