If you are really willing to learn an air cooled VW (beetle, ghia, manx) is a great start. Parts for days internationally and every one of them shares pretty much every part. Just get ready for carb gremlins and monthly tune ups

A former coworker of mine bought a Mazda 323 BJ for 950 euros. It has the 1.6L petrol with 105 bhp.
The car is not a total turd and it is quite enjoyable. And very friendly with the wallet of a 22 year old kid.
Ofc, the first thing he bought was a subwoofer and his 2nd purchase was a pair of Koni shock absorbers.
Value for money, he did get a pretty good deal with it.

german here, what you are looking for is an mx5 man. it has the best community, there is guides galore, parts for cheap, SO much shit to do to improve the car without spending alot of money, easy maintenance to get you into the basics, nice track tool, and it drifts.
I was like you starting out with this and from then on developed into so much more. now I hit the nordschleife alot and have done too many mods to list, right now I am building a 13b rotary to be swapped into the chassis

-fuel efficient
-low power means you can drive it hard on the street
-practical
just hard to find one thats in good condition
