Guilty Gear has the biggest population followed by Blazblue. Pick whichever one suits your fancy. Blazblue is slower and more tactical while Guilty Gear is fast and ruthless. There's a lot of comparison posts and videos on the internet if you're really curious.
What platform you pick doesn't matter too much but do note that Guilty Gear is a lot harder to run than Blazblue on PC since it uses high poly 3D to simulate 2D.
If you're new to weeb beaters, I suggest you stay away from UNIEL for the time being because of a smaller population count.
