call me a pleb but I really enjoy my base model mustang GT's interior (2014). The dash is simple and muted colors for the most part and the A/C controls and music is analog knobs and not a gay ass screen.

I don't think it looks particularly good, but the functionality is there when in most cars it's lacking nowadays. I like real buttons and knobs, not a fingerprint-covered gook tablet.

Not an option, and no it cannot be retracted. Worst of all, no androidplay or Apple CarPlay yet. That said, only the radio is controlled in the info and you can get through it quickly. Climate controls are still dials and buttons

That automatic did exactly what I wanted it do, unlike my later bmw e60
when taking a turn from standstill and you floor the gas more and more the benz would keep 2nd gear until I slightly lifted and then you hold on for dear life when it upshifted
my shit bmw box just upshifts while upping the gas it does the opposite of what you want
tbf the bmw is a far better cornering car. that benz will take your head off the second you get a little confident in it.
