Unless you find a really good, newer, low-mileage salvage that was written off for body damage, it's not even worth the pain in the ass compared to buying a crate engine.

Right now it's a tossup between the 350 and the 4.8/5.3 truck motors, it just depends on what you're familiar with. In ten years, the latter will be more dominant.

It's cheaper to buy a crate than it is to purchase a junkyard engine and have to do major work.

Trust me. I bought a 5.3 from a junk yard and had to do all new internals. Ended up taking it apart twice and all the bills ended up like $500 less than a comparable crate with a warranty from GM.
