Undead Giants are pretty easy to take down. You always have the Poison Knives as an option if nothing else.

With Rom you have to deal with oneshotting romlets in cramped quarters and Rom turtling in some corner like a fag.

Chalice Rom is such shit compared to the story one and I think Chalice Rom and amy are the most disproportionately hard bosses compared to their story appearances.

What boss have you tried getting summoned for? Orphan and Ludwig are always active spots. Micolash annoys people, try him sometimes. Ebrietas is also a boss people summon for often. Don't ring just at the fog gate: in Mensis, people will summon for the entire area. Have you setup a password once and forgot to remove it after?

I don't want to get summoned for bosses, it's like one minute of gameplay and totally not worth it. I want to get summoned for coop.

Ring at the first lantern in every DLC area, then. If you think that, in NG+, people will summon you to go through central Yharnam, it's not going to happen.
