on one hand it's interesting to see what was cut after having played vanilla, on the other if it melds well with the game you probably don't even need to know that difference to enjoy it (i.e. new vegas uncut - outside bets adds back in a ton of little things that you might notice and go "oh neat" if you've played without it, but at the same time they just snugly fit into the game if you always had them) I'd say go for patch -> restoration if you know you like iso fallouts enough to do multiple playthroughs, or just restoration if you only want to do one
