People want features.

We still had boats into the 2000s, just not as prevalent.
The GM B-Body went until the mid-90s, Ford's Panther Body went forever and a half, and Pickup Trucks have been impossible to find in smaller-than-Ranger-size for quite some time.

Compacts are getting lighter than the previous gen for the first time in ages and for most people getting a midsize sedan for compact money is a good thing especially if the fuel economy stay the same or go up.

Nobody likes cramped cars. SUVs are popular because of interior room so people are making cars bigger to compete.

The same car model getting slightly bigger and pricier with each successive generation is a psychological trick to get people to buy a more expensive car. If you have fond memories of your grandpa's modest BMW 3, you might think it's a good idea to buy a BMW 3 yourself - except today's equivalent to that would be BMW 1, and 3 is now a foot longer, 50% pricier, and comes with 180hp and leather in base trim.

You wont lure customers if your top feature is a cigarette lighter.

Fake leather, who cares. The "50%" figure isn't precise either, the point is that the current 3-series is a noticeably higher-end car than 40 years ago.

I really dislike modern car styling.

Cars back then just have this elegance to them. Like they look like they have been designed by experienced artists with a good understanding of aesthetics. The designs are timeless.

But cars now look like they have been designed by fresh graduates who take their inspiration for designs not from art but from video games and comics. They have no restraint so they think that to make a car look better they have to add more design elements. Just round or rectangle headlights are boring! They need to have all kinds of elaborate shapes. Also HURR huge grills. And make the car look ANGERY. Also add lines to the car to make it look FAST.

I love it but of course they were too cowardly to actually put it into production.

The automotive industry is too risk averse.

It's find it similar to how phones nowdays are all these featureless big screens with thin metal frames when back then there were all kinds of crazy designs (which to be fair tended to not be very practical but still).

The design of new cars has far more to do with safety standards than incompetent designers. Government regulations have been slowly strangling the American auto industry since the early 70s. Even the Challenger, a car that’s desperately trying to look retro, has to make design compromises all in the name of collision and pedestrian safety.
