The first because I appreciate that M&B is an RPG series and everything you do you do through your character. You can only give your vassals and soldiers commands, both on the overworld and in battle, rather than control them directly and you rely on messengers or travel for long distance communication. To somehow switch to controlling someone else is in breach of that. It also creates stupid situations where you'd basically want to get knocked out to control a soldier with better equipment/stats, which is often the case in the early game, or you'd just be more reckless in general. Also git gud.

It depends on the scale of the dismemberment. It's just that limbs shouldn't go flying nilly willy when two armored forces meet and it looks like an edgy 15 year old's ideas when it's put next to cuckoldry.

Even when one force is trying to escape they will be forced to form up and meet the enemy if the other force gets close enough, because at that point there will be a battle and you want to avoid getting attacked while on the move at almost all costs.

You mean the thrust move? I think that's the only one you can use on horseback, same goes for normal spear too.
